Vegan Burger With Sweet Potato Fries




Ingredients: 
Burger Buns
Vegan Patty, I used Fry's Traditional Burgers

Cos/Romaine or Iceberg Lettuce
1/2 Tomato, sliced
1/4 Red Onion, thinly sliced
2-3 Button Mushrooms, sliced
1 Small Beetroot, grated


Sweet Potato, washed and cut into chip pieces
2 Tbsp Olive Oil
2 Tsp Garlic Powder
Salt & Pepper, to taste



Method:
1. In a bowl combine olive oil, garlic powder, salt and pepper. Add in sweet potato and mix around until fully coated. Place in grill for approximately 10-15 mins or until crunchy.

2. In grill, cook patty until crunchy brown. Grill mushroom slices.

3. Cut burger bun in half and layer on lettuce, tomato, red onion, beetroot, patty and mushrooms. Top with your favourite sauce (I used some leftover tofu sour cream). Pile chips on plate and enjoy!
