Day 14: Tofu Pad Thai

I've always been a big fan of Noodlebox but the last time I ate there I figured out that even though you can ask for tofu and ditch the egg, it doesn't necessarily mean your food will be vegan. Pad Thai is always used with fish sauce. DUN DUN.
But to my surprise I made my version taste even better. It was so good I was licking the bowl ^-^
 
Tofu Pad Thai







































Ingredients:
1/2 Pkt Rice Noodles (or you can use Udon Noodles)
1 Cup Firm Tofu, diced
2 Stems Shallots/Green Onions, sliced
1 Small Bunch Bok Choy, sliced
2 Cups Frozen Super Greens (Brocolli, Green Beans, Spinach), thawed
1 Tsp Black Bean Sauce
2/3 Cup Hot Water
1 & 1/2 Tablespoon Peanut Butter
1/4 Cup Peanuts, chopped finely
1-2 Tbsp Chilli Paste (depends how spicy you like it)
2 Garlic Cloves, minced
3 Tbsp Olive Oil
4 Tbsp Soy Sauce

Method:
1. Heat noodles as per packet instructions. Set aside.

2. In a fryingpan or wok heat olive oil and add garlic and shallots. Stir for 10 mins.

3. Add in brocolli, green beans and bok choy. Cook until softened.

4. Add in tofu cubes, black bean sauce, soy sauce and chilli paste. Mix until combined.

4. Mix the hot water and peanut butter together until peanut butter has dissolved. Pour into fryingpan (or wok) and mix until fully coated.

5. Lastly add in noodles and chopped peanuts. (The noodles should soak up some of the juices so keep mixing).

6. Spoon into a bowl and garnish with more chopped peanuts and shallots. Enjoy!
