Day 18: Avocado & Cashew Cream Pasta

This is an adaptation of Oh She Glows' 15 Minute Creamy Avocado Pasta

Creamy Avocado Pasta





   
































Ingredients:
2 Large Avocadoes
1/4 Cup Lemon Juice
1/3 Cup Soaked Cashews
3 Tbsp Sunflower seeds
2-3 Garlic Cloves, minced
2 Tbsp Olive Oil
1 Tsp Cumin
2 Tbsp Nutritional Yeast
2 Cups Cooked Pasta (of your choice)
Salt & Pepper, to taste

Method:

1. Cook your pasta as per instructions on packet, I used San Remo's Gluten Free fettucine but you can use any type of vegan pasta.

2. Process garlic, olive oil, cashews, 2 tbsp sunflower seeds and lemon juice in a food processor.

3. Add in avocado, cumin, salt, pepper and nutritional yeast. In a large bowl combine pasta and sauce together. Sprinkle with salt, pepper, nutritional yeast and garnish with remaining sunflower seeds.
