Day 21: Chickpea & Bean Burritos

This was seriously so yummy, sorry about the crappy photo I don't really know how to roll them properly and I was too hungry to fuss around trying to take a nice picture. >___<


Chickpea & Bean Burritos With Guacamole




 



































Ingredients: 
2-3 Tbsp Olive Oil
2-3 Button Mushrooms, sliced
1/2 Can Five Bean Mix, drained & rinsed
1/4 Can Refried Beans
1/2 Can Chickpeas, drained & rinsed
3 Tbsp Taco Seasoning
1/4 Cup Warm Water
1 Small Onion, diced

1 Large Tomato
Handful Lettuce
2 Tbsp Black Olives, sliced


Guacamole:
1 Avocado, diced
1/2 Tomato, diced finely
2 Tsp Cumin Powder
2 Tbsp Lemon Juice
Garlic Powder, to taste
Salt & Pepper, to taste

Method: 
1. In a food processor, process 5 beans mix and set aside.

2. Heat olive oil in frying pan and add in onion and garlic, cooking till onion is translucent on medium heat. Add mushrooms and cook for another 10 minutes.

3. Add chickpeas and bean mixture to the pan. Add in refried beans and in a cup stir water with taco seasoning and add to pan.

4. Heat tortillas as per packet instructions. Layer shredded lettuce, mushroom/chickpea/bean mixture, tomato, olives and guacamole in middle of tortilla wrap up and enjoy!
