Day 22 : Curried Pumpkin & Lentil Soup

Curried Pumpkin & Lentil Soup


5 Cups Vegetable Stock
1 Tbsp Olive Oil
2 Garlic Cloves, minced
2 Tsp Curry Powder
1 Cup Dried Lentils
1 Onion, diced
2 Cups Pumpkin, peeled & diced
1 Carrot, peeled & diced
1/3 Can Coconut Cream
(Keep the seeds to roast for a yummy and healthy snack)


1. Heat olive oil in a large saucepan. Add onion and garlic, cooking until soft. Stir in curry powder and cook for 30 seconds.
2. Add lentils, pumpkin, and stock. Stir until well-combined. Bring to the boil. Reduce heat to medium-low. Cook, partially covered, for about 20 minutes, stirring regularly until pumpkin is just tender. 
3. When pumpkin is tender mash with a fork and seperate. Serve with crusty bread. Enjoy!
