Day 23: Mushroom Nut Loaf

I really wanted to try something relatively easy but different tonight. So I searched the internet and found this recipe for mushroom nut loaf. Serve with vegies and gravy. You could even make this a sunday roast dinner if you roast some potatoes, onion, carrot and pumpkin...yum!

Mushroom Nut Loaf With Sweet Glazed Carrots, Greens & Onion Gravy!!










































Ingredients:
2 Tbsp Olive Oil 
3 parsnips, boiled & mashed 
1 Large Onion, diced
3 Garlic Cloves, minced 
1 Cup Cashews, ground
1 Tbsp Cornflour
1 Tbsp Chives, sliced
1 Tbsp Thyme
100ml Vegetable Stock
1 Tbsp Nutritional Yeast 
200g Button Mushrooms, sliced finely


Method:
1. Preheat oven to 180c. Heat oil in fryingpan, cook onions and garlic until soft.

2. In a food processor grind up cashews. Add in garlic and onion, herbs and cornflour, mix until combined.

3. Add in the mashed parsnips. Mix yeast with vegetable stock and add to the bowl.

4. Heat additional olive oil in fryingpan and cook mushrooms till they are soft. Grease a loaf tin and press half of the mixture, top with mushrooms and add the rest of the mixture on top.

5. Wrap the loaf tin in tinfoil and bake for approx. 1-1 & 12 hours. Remove from oven and serve with sweet glazed carrots, beans and mushroom gravy - enjoy!


Sweet Glazed Carrots:
1 Cup Whole baby carrots
2 Tbsp Nuttelex
3 Tsp Brown Sugar
2 Tbsp Water
Salt & Pepper, to taste

Method:
1. In a saucepan cook carrots, margerine, brown sugar, water. Sprinkle with salt & pepper.
