Day 26: Tofu & Pasta Scramble

Tofu & Pasta Scramble
















































Ingredients:
1/2 Pkt Firm Tofu, crumbled
1/2 Red Onion, diced
3 Garlic Cloves, minced
3-4 Button Mushrooms, diced

1/4 Cup Vegetable Stock
1/4 Cup Lemon Juice
2 Cups Cooked Pasta, cooked as the package suggests
1 Red Capsicum, diced
3-4 Tbsp Olive Oil
3 Tbsp Nutritional Yeast
1 Tbsp Paprika
1 Tsp Chilli Paste or Powder
1 Tsp Turmeric
Salt & Pepper, to taste


Method:
1.  Heat olive oil in fryingpan. Cook garlic and onion until soft. Mix in capsicum and mushrooms.

2. In a bowl crumble tofu. Mix together stock, yeast, paprika, chilli paste and tumeric. Pour over tofu and let sit for 5 minutes. Add to fryingpan and keep stirring. Add in lemon juice.

3. Serve on toast or have by itself. Enjoy!
