Day 3: Mac N Cheeze

Sorry about the lack of updates. I've been super busy organising my birthday party! One day before the Vegan 30 Day Challenge started I tried out a recipe found on one of my favourite blogs Oh She Glows. This is an adaptation of this recipe.

Mac N Cheeze

2-3 Tbsp Olive Oil
1 Medium Onion, diced
2-3 Cloves Garlic
1 Zuchini, grated

2 Medium Carrots, grated
1-2 Pkt "Chreese" Sauce
1/2 Cup Breadcrumbs

3 Tbsps Nuttelex Original (Or any other Vegan Margerine)
3/4 cup Soy milk
1/2 Tsp Garlic Powder
6 tbsp Nutritional Yeast
1/2 Cup Raw Cashews

2 Tsp Dijon Mustard
2-3 Cups Pasta Shells (or any other cooked Pasta)
Salt & Pepper, to taste

1. In a frying pan heat oil, add in onion, garlic, zuchini, carrot and garlic. Cook until softened.

2. In a food processor add chreese sauce mixture, cashews, dijon, yeast, garlic powder, soy milk and process until a creamy consistency.

3. In a small bowl mix together breadcrumbs and margerine until a paste forms.

4. In an over-proof dish mix pasta and chreese sauce mix together along with the cooked vegies. Sprinkle breadcrumb mixture on top and extra yeast.
