Day 6: Tofu Rice Paper Rolls

Tofu Rice Paper Rolls With Sweet Chilli Dipping Sauce

1 Pkt Rice Paper Roll Sheets
3 Cups Warm Water

250g Tofu, crumbled
1 Zuchini, shredded
1 Carrot, shredded

1 Yellow Capsicum, sliced
1/2 Cup Coleslaw Salad Mix (without mayonnaise)
1 Stem Shallot, sliced
3-4 Tbsp Soy Sauce

2 Cloves Garlic, minced

Dipping Sauce:

2 Tbsp Sweet Chilli Sauce
1/2 Tbsp Soy Sauce

1 Tsp Minced Garlic
1 Tbsp Hot Water
1 Tsp Sugar

1. Heat olive oil in a saucepan & add shallots, garlic & soy sauce. Once garlic has browned add in zuchini, carrot, capsicum, tofu & coleslaw mix.

2. In a large shallow bowl or plastic container fill with 3 cups warm water, add in one rice paper sheet at a time and let sit for 3 minutes or until soft. Remove & drain on a paper towel.

3. Add filling onto rice paper sheet and fold as per instructions on packet.

In a small bowl combine all ingredients & whisk until brown sugar has dissolved. Pour into a small bowl and enjoy with your rice paper rolls!
