Day 9: Chargrilled Tofu & Vegetable Skewers

Chargrilled Tofu & Vegetable Skewers With Peanut Sauce






































Tofu & Vegetable Skewers:
1 Pkt Skewer Sticks
1 Large Zuchini, cubed
5-6 Button Mushrooms, halved
1/2 Pkt Firm Tofu, cubed
1 Large Red Onion, cubed
1/4 Red Capsicum
1/4 Green Capsicum
3-5 Tbsp Soy Sauce
2 Garlic Cloves, minced
Salt and Pepper, to taste


Peanut Satay Sauce:
2 Tbsp Lemon Juice
1/2 Cup Crunchy or Smooth Peanut Butter
2 Tbsp Tomato Sauce
2 Garlic Cloves, minced
1/4 Cup Soy Sauce


Method:
1. In a bowl combine soy sauce, minced garlic and salt and pepper. Soak tofu cubes in marinade for at least 10 mins.
2. Thread vegetables and tofu alternatively onto skewer sticks. Place in grill or on bbq until vegetables start to char.

3. For peanut sauce: in a small bowl add in peanut butter, lemon juice, tomato sauce, garlic and soy sauce. Mix with a spoon until a creamy sauce appears.

4. Serve skewers on a bed of cous cous or with a salad and peanut sauce. Enjoy!
